Il Caviale proviene da uno speciale ibrido di storione Kaluga e storione dell’Amur (Huso Dauricus x Acipenser schrenkii, Aquafarming). Viene prelevato da almeno 12 anni di storione maturo. Si contraddistingue per un aroma incredibilmente delicato, burroso, con un retrogusto lungo, sottolineato dal metodo di salatura dolce e delicato Malossol.

 

Caratteristiche:
Diametro: grande, 3,0-3,3 mm circa
Colore: varia dall’oro, al grigio, al marrone, al grigio-nero, al bruno grigiastro, al marrone dorato
Texture: morbida
Note aromatiche e gusto: burroso con retrogusto sottolineato dal metodo di salatura dolce
Data di conservazione: 6 mesi.
